Here at Skinny, there’s nothing we love more than…love! *except maybe snacks, actually on second thoughts*
And we’re not just talking about romantic love here (which we’ll obvs be seeing loads of on Monday when we open the gram, pft!) Nope, we’re talking about the other great loves of our lives. The people who are there for us through thick and thin, for richer or for poorer, in sickness and in health – our gal pals, of course!
In fact, did you know that this Sunday 13th February is officially Galentine’s Day? Yep, a whole day dedicated to showering your besties with the love they deserve to prove to them how much you care ❤️
And what better way to share the love than by delivering a batch of our homemade Galentine’s cupcakes to your best gal pals?! They might be low in calories and effort, but we reckon they’ll definitely bring a big old smile to your BFF’s face. Grab our super easy recipe below for our Skinny Whip Strawberry & Chocolate cupcakes!
Makes 12 scrumptious Skinny cupcakes
Prep time: Just 10 little mins
Cooking time: 15-20 mins
Ingredients:
For the cupcakes:
- 2 Skinny Whip Skinny Whip Strawberry & Chocolate bars, sliced thinly
- 75g butter or low-fat spread
- 110g golden caster sugar
- 2 eggs
- 1 tsp vanilla extract
- 180g plain flour
- 3/4 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 80g Greek yoghurt
- 80ml milk
For the icing:
- 220g low fat cream cheese
- 2-3 tbsp powdered stevia
- 1/2 tsp vanilla extract
Step one: Pre-heat oven to 180 degrees and line a 12-hole cupcake tray with a lil bit of butter or margarine.
Step two: Whirl together your butter and sugar until you’ve made a mixture that’s light and gorgeously fluffy. If you’re fancy enough to have a mixer, you can use this to help you – if not, just by hand will do the trick!
Step three: Grab yourself two separate mixing bowls. In one, mix your eggs, milk, yoghurt, and vanilla. In the other, whizz together the flour, baking powder and bicarbonate of soda. Then, slowly whisk the egg mixture into the butter and sugar, before gently pouring the flour mix into one bowl until everything is fully combined.
Step four: Fill each of your cupcake cases 1/3 full. Then pop a slice of Skinny Whip Skinny bar into each of your cake cases and cover with more mix until 2/3 full. Pop in the oven and bake for 15-20 and allow to cool fully.
The waiting is the hard part…we know!
Step five: For the icing, whip the cream cheese until light and fluffy, whisk in the stevia and vanilla, add to a piping bag, and decorate! You can even top with more Skinny Whip bar slices or real strawberries too if you’re feeling super sweet…
Step six: Lick the bowl.
