Tuck into our Orange Choc Skinny Crunch Crumble Cupcakes this World Baking Day

Just when we thought we couldn’t love a day more than ‘No Diet Day’ - World Baking Day comes along! So we’re celebrating the only way we know how... with a super scrumptious cupcake recipe with a serious Skinny twist, obvs! Say hello to our Chocy Orange Skinny Crunch Crumble Cupcakes. Our Chocy Orange Skinny Crunch Crumble Cupcakes Recipe

Bits you’ll need

100g plain flour

20g cocoa powder

140g caster sugar

1½ tsp baking powder

40g unsalted butter (at room temperature)

120ml whole milk

1 egg

¼ tsp vanilla extract

The finishing touches

1 pack of unsalted butter

1 pack of icing sugar

4x Chocolate Orange Skinny Crunch bars (rumbled into pieces) 

*or* 2x Chocolate Orange Skinny Whip bars chopped up into slices 

How to make... 

Step 1

Heat up your oven to 180C/160C fan/gas 4. Mix your flour, cocoa powder, sugar, baking powder, pinch of salt and butter in a bowl and give it a good old mix for at least five mins. Stir at a slow speed until it’s all combined together to make a lovely silky mix. 

Step 2 

Whisk in your milk, egg, and vanilla extract to the mixture and give it another good stir for 5 more minutes. Be careful not to overmix it though!

Step 3

Spoon the chocolatey mixture into your muffin cases until they’re about two-thirds full. Pop into your preheated oven for 20-25 minutes. When you take them out of the oven, make sure the sponge bounces back when you press lightly on the top.

Step 4

Leave your cakes to cool on a rack. Meanwhile, mix together a pack of unsalted butter, three heaped tablespoons full of cocoa powder, and a regular-sized pack of icing sugar and beat until smooth to make your scrummy buttercream. 

Step 5

Using a piping bag (or a spoon if you’re not feeling super crafty!) layer the choccy icing on top of your cupcakes. Take your Choc Orange Skinny Crunch bars and break them apart with your bands until they’re totally crumbly. Then sprinkle the crunchy crumbled bars on top of the cupcakes. You can even add some slices of Choc Orange Skinny Whips if you like for extra decoration and yumminess! 

Step 6

Add a little bit of grated orange zest to the top of them give the cakes an extra orangey kick and then TUCK IN!
