Skinny S’more Sandwiches

Did somebody say dessert? Three ways Skinny treats can jazz up our favourite meal...

The best part of tea time is dessert, right?! After a long day of running around being your super-self, there’s nothing like a bit of cheeky indulgence as a reward. But when you’re on a weight loss journey and you’re trying to keep calories down, it can be hard sometimes to justify those extra treats. Well, not with Skinny! Every single one of our bars is the guilt-free answer to your naughty snacking dreams. No matter which one you choose, you’ll be eating less than 99 calories, and guaranteed to not feel naughty at all!

We also know that there are some days though when just a Skinny Bar won’t cut it. The days when you need just that extra little bit of indulgence. After all, sticking to a calorie control diet is only bearable if we can truly treat ourselves once in a while! So for the days when you’ve saved up those syns and earned an extra scrumptious reward - we’ve got three mouthwatering dessert ideas with a tasty Skinny Bar twist.

The only problem? How to decide which one to rustle up first, of course!

-------------------------------------------------------------------------------------

  1. Skinny Crunch Crêpes - Makes four scrummy crêpes

Flippin’ easy and delicious!

You’ll need:

  • 125 g plain flour
  • 2 eggs
  • 1 tbsp. caster sugar
  • 1/4 tsp. salt
  • 360 ml milk
  • 1 tbsp. butter
  • 2 x crumbled Skinny Crunch bars of your fave flavour

To make:

  1. In a big bowl slowly whisk together your flour and eggs, pouring in the sugar and salt and stirring until you’ve made a mixture. Bit by bit add the milk and give it another stir. Hey presto - you’ve made batter! Let it stand at room temp for about 15 minutes until it’s bubbly on top.
  2. Melt the butter in a small frying pan over medium heat. At about 60ml at a time, drop the batter evenly onto the pan, swirling it so you get an even coat for your crêpe.
  3. Cook for 2 minutes, then the fun part - flipping it real good! * and try your best to catch!* Cook for 1 more minute and take out of the pan. Repeat until you have four crêpes, then serve them warm with your yummy crumbled Skinny Crunch bars on top and a dusting of icing sugar. Allow the bars to melt for a bit and then tuck in!
  1. Skinny S’more Sandwiches - Makes four melty s’mores

Who says BBQ season is over just yet?!

You’ll need:

  • 8 Rich Tea biscuits
  • 2 Skinny Whip bars of whatever flavour you fancy - sliced into 8 pieces
  • 4 large marshmallows
  • A BBQ or small campfire to cook on!

To make:

  1. Cut out 4 squares of tin foil big enough to wrap your s’more sarnies in.
  2. Put 1 biscuit on each piece of foil and top with 2 chunks of Skinny Whip and a marshmallow. Place the other biscuit on top and wrap each tasty parcel tightly. Put the s’mores on a hot barbecue (or very carefully hold with kitchen tongs over the hob if that’s not an option!) Warm through for 2 mins on each side, so that the Skinny Whip chunks and marshmallows are lusciously melty.
  3. Remove from the heat and cool a little bit before carefully peeling off the foil. Serve while still warm and gooey for ultimate Skinny Whip tastiness!
  1. The Skinny Topped Salted Caramel Sundae - Makes two glorious glassfuls

Super indulgence - this one is heaven in a glass.

You’ll need:

  • 3 tbsp runny caramel from a can
  • 1 tbsp smooth or crunchy peanut butter
  • 1 tbsp milk
  • 2 scoops toffee or caramel ice cream
  • 2-4 scoops vanilla ice cream
  • 1 large banana, sliced
  • 1 heaped tbsp roughly chopped salted peanuts
  • 1 choc flake for the top
  • 2x crumbles Skinny Crunch bars of your fave flavour

To make:

  1. Heat the caramel, peanut butter, milk and a pinch of salt in a little saucepan, stirring until velvety smooth. Split half the warm sauce between 2 sundae glasses. Layer the ice cream and the rest of your delicious ingredients in each of the glasses, drizzling a little more sauce on the top. Finally, pile on that all-important topping of crumbed Skinny Crunch pieces and add a choccy or caramel wafer to complete this super dreamy dessert!
